Quick Raspberry and Almond Flapjacks




I adore raspberries and they are super abundant at this time of year so I thought I'd try to make some flapjacks with the mashed fruit. This is a super quick, nutritious and tasty snack after the gym or popped into a lunch box and requires no skill to make. It is sugar-free, gluten-free, dairy-free and so irresistible it probably won't last longer than a couple of days. Oh, and did I mention it is totally guilt-free? It is packed with quality ingredients that are chock full of nutrients such as B complex, Vitamin E, phosphorus, magnesium, iron, calcium, potassium and the trace minerals zinc, manganese, copper, and chromium - all essential nutrients on an anti-CanSur protocol.



150 g gluten free organic oats

100 g organic ground almonds

2 tbs organic pumpkin seeds

2 tbs organic sunflower seeds

200 g organic raspberries, mashed

6 tbs organic date syrup

3 tbs solid organic coconut butter

organic blanched almonds to decorate

** 1 cup Healing Intent


1. Mix together in a large bowl and once the ingredients stick together, press into a lined deep-sided baking tin using the palm of your hand. Once the mixture is an even thickness - not too thick, no more than 3/4 inch, pop into a preheated oven and bake at 180C for 25 minutes until golden brown. Press in the whole almonds to decorate.


2. Let the flapjacks cool, cut into even sized pieces and store in Tupperware.
